Salez-les, poivrez-les. \u00c9mincez les oignons, coupez la carotte en fines rondelles.<\/li>\n\n\n\n<li>Dans un faitout, faites fondre le beurre \u00e0 feu moyen. Dorez-y les morceaux de viande de tous les c\u00f4t\u00e9s. Ajoutez les oignons et la carotte. Saupoudrez de farine.<\/li>\n\n\n\n<li>Faites un peu roussir en remuant le tout. Mouillez avec la bi\u00e8re. Laissez bouillonner en remuant pour assurer la liaison. Ajoutez le vinaigre de x\u00e9r\u00e8s, la cassonade, le thym, le laurier.<\/li>\n\n\n\n<li>Portez \u00e0 \u00e9bullition. Cuisez 30 min. Tartinez une tranche de pain d&rsquo;\u00e9pice de moutarde. Mettez-la dans la carbonade. Cuisez encore 1 h. Si le jus de cuisson est trop \u00e9pais, d\u00e9tendez-le avec un peu d&rsquo;eau.<\/li>\n\n\n\n<li>Disposez les morceaux de viande dans un plat un peu creux, couvrez-les de rondelles de carotte et d&rsquo;oignons. Nappez de sauce.
